Paleo - Sunday

Sunday was "prep" day.  For breakfast, I made myself a smoothie with strawberries, bananas, apple juice (no sugar added) and ice.  I drank about half and put the rest in the fridge for later.

By 10:30 am I was feeling a little hungry and craving solid food.  I fried up a few pieces of bacon, ate two and gave two to Greg.

After that I made paleo mayo and paleo salad dressing to be used throughout the week.  I also cut up some veggies for snacking/cooking later on.

For lunch I made crab avocado salad.  I used the paleo mayo from earlier, and you're supposed to serve the salad ON the avocado.  However I realized I don't know how to "pit" and avocado...so I ended up chopping it and mixing it in with the salad.  It was ok...Greg declined having any and ate non-paleo leftovers from the night before. I had intended on eating the leftovers for lunch on Monday but that didn't happen.

Dinner was a bigger success than lunch.  Dinner was bacon wrapped scallops.  I was very excited that I didn't screw these up because the scallops were the most expensive thing I bought for this week.  I did cook them in a little butter (not paleo approved) but that was a concession that needed to be made.  Served on a bed of lettuce and was delicious.

I'm Going Paleo!*

That right, I'm going on the paleo diet... at least for the next week.  What is the paleo diet?
